2019 was a dry and hot year, even in Elgin. In early summer, the wind blew violently, and the crops were naturally thinned out. Then the heat came and with no rain, the wines turned out to be concentrated, deep and with great character. The yield was slightly lower than in 2018. The 2019 Paseline Chardonnay shows great potential. The color is green to gold with a brilliant clear hue. The nose offers bright citrus notes with hints of lemon sponge, honeysuckle and oatmeal, followed by a salty sea spray. A full-bodied and versatile wine with rich and delicate flavors of lime, tropical fruit and lightly toasted nuts. This vintage is also blessed with rich acidity, making it a wine that can withstand decades of aging. The wine has great texture and is very well balanced.

For savory dishes, pair this exquisite Chardonnay with lightly poached salmon drenched in a buttery sauce for a warm, malty note. The orange-flavoured duck is a perfect match for the freshness of this wine. For a touch of indulgence, try a freshly baked lemon meringue pie toasted in a buttery crust. Paserene is a small family owned winery in Franschhoek owned by Martin Smith and Ndabe Mareda with the sole purpose of producing high end fine wines. Great care is taken to ensure that the wines produced and the label artwork are true to the 'sense of place and person', ensuring a lasting legacy. When you sip Paselen's boutique wines, you are creating an unforgettable, memorable moment with every sip . The name Paserene comes from the Latin word Passeriformes. Passeriformes are eyes of "traveling, free" birds, including swallows. Paserene Winery is located in the quaint town of Franschhoek and produces award-winning wines.

●Cap: cork ●Cultivation/soil: Our Paserene Wine Range uses grapes harvested from our Tulbagh, Elgin and Franschhoek wine farms. The luxury Paserene range focuses on quality and attention to detail. That's why we chose terroir for this series. Our Chardonnay comes from Elgin, which gives the wine a light, feminine quality.
●Manufacturing: The grapes for this wine were harvested between 22 and 23 Brix and then transported to the winery in Franschhoek and cooled to 1°C. The grapes were then put whole into the press and pressed for 7 hours. The juice was decanted into barrels at about 600 NTU per cent. This series of processes takes place in the presence of oxygen in our wine cellars and contributes to the aging of the wine. Fermentation starts naturally after 4 days and lasts for about a month. This creates a rounded flavor that spreads in your mouth. Due to the low pH, malolactic fermentation takes about 12 months to complete. Chardonnay barrels are rolled without agitation for battonage.
The wine benefits from contact with the sediment without taking up much oxygen and spends 16 months in barrel, much longer than usual for white wine. 30% new oak and the rest matured in second and third fill barrels. Our Chardonnay is bottled unfiltered and aged in bottle for one year before release.
