Midnight's nose has strong mineral nuances and expressive aromas of cassis, licorice and blackberry. The palate has supple tannins that give it a rounded flavor and a deliciously dry mouthfeel.

It's a perfect companion for barbecue. It goes especially well with medium-rare steak and lamb. The smokeiness of the meat is ideally paired with the woody notes in the glass. Add strong, sharp gouda or cheddar and grilled onions to the meat for a perfect match with a full-bodied red wine. Paserene is a small family owned winery in Franschhoek owned by Martin Smith and Ndabe Mareda with the sole purpose of producing high end fine wines. Great care is taken to ensure that the wines produced and the label artwork are true to the 'sense of place and person', guaranteeing a lasting legacy. When you sip Paselen 's boutique wines, you are creating an unforgettable, memorable moment with every sip . The name Paserene comes from the Latin word Passeriformes. Passeriformes are eyes of "traveling, free" birds, including swallows. Paserene Winery is located in the quaint town of Franschhoek and produces award-winning wines.

●Cap: cork ●Cultivation/soil: Midnight grapes are sourced from our wine farm in Trubach and are arguably the best expression of the Elements Range's terroir.
●Manufacturing: At our winery, we don't use standard barrels because we want exceptional results. Our new barrels are seasoned and dry, steamed without toasting for up to five years. It is then used for 16 months to make wine. Patience is inherent in our winemaking.
