The scent is bright and fresh with bright green to gold hues. There are nuances of green figs and green apples, not the expected asparagus and gooseberry aromas. The real difference lies in the palate with a tropical explosion. Juicy cantaloupe (span speck) blends with ripe mango, passion fruit and pineapple. A well-balanced wine with added weight, a round and sumptuous mouthfeel and a long, lingering finish.
food pairing
A fresh caprese salad drizzled with homemade basil pesto brings out the green nuances of the wine. Light tomato-based pastas also work well with emeralds, especially for summer evening dinners. The flavor of goat cheese baked with honey complements this wine well. Adding a green salad with citrus dressing makes it even more delicious. Paserene is a small family owned winery in Franschhoek owned by Martin Smith and Ndabe Mareda with the sole purpose of producing high end fine wines. Great care is taken to ensure that the wines produced and the label artwork are true to the 'sense of place and person', guaranteeing a lasting legacy. When you sip Paselen's boutique wines, you are creating an unforgettable, memorable moment with every sip . The name Paserene comes from the Latin word Passeriformes. Passeriformes are eyes of "traveling, free" birds, including swallows. Paserene Winery is located in the quaint town of Franschhoek and produces award-winning wines.

●Cap: cork ●Cultivation/soil: Element series grapes are harvested from three vineyards with different soils and climates. This Sauvignon Blanc is made evenly from Elgin (50%) and Franschhoek (50%) grapes.
●Manufacturing: At our winery, we don't use standard barrels because we want exceptional results. Our new barrels are seasoned and dry, steamed without toasting for up to five years. It is then used for 16 months to make wine. Patience is inherent in our winemaking.
