Paselen Elements Emerald Sauvignon Blanc 2019
Paserene Elements Emerald Sauvignon Blanc 2019
The scent is bright and fresh with bright green to gold hues. There are nuances of green figs and green apples, not the expected asparagus and gooseberry aromas. The real difference lies in the palate with a tropical explosion. Juicy cantaloupe (span speck) blends with ripe mango, passion fruit and pineapple. A well-balanced wine with added weight, a round and sumptuous mouthfeel and a long, lingering finish.
A fresh caprese salad drizzled with homemade basil pesto brings out the green nuances of the wine. Light tomato-based pastas also work well with emeralds, especially for summer evening dinners. The flavor of goat cheese baked with honey complements this wine well. Adding a green salad with citrus dressing makes it even more delicious. The charcuterie board is perfect for wine tasting with emeralds.
