A wine that is almost no longer available in Japan. A rare wine that we managed to get only 20 bottles in stock. A rare, rich, highly condensed and unique premium wine that you can taste. A blend of Pinotage and Syrah unique to South Africa, made with the Italian Amarone in mind and arranged in the Asala style.
Unlike Italian Amarone, we take advantage of South Africa's dry climate to dry our grapes. After harvesting Amarone, the grapes are moved and dried in the shade, but in the case of Asala, the branches are crushed before the grapes are harvested to prevent moisture from reaching the fruit. By drying the grapes for 3 weeks, the moisture will evaporate, and the weight of the grapes will be reduced to about 2/3, making them very condensed. In this way the drying period can be shortened and also the grapes kept healthy and healthy.
After harvesting, the grapes are sorted twice, lightly pressed and fermented at low temperatures. Punchdowns are done 3 times a day during fermentation. Aging takes place in 300L barriques for 3 years (80% French oak, 20% American oak).

Founded in 1691, this winery represents South Africa with a long history. ●Cultivation/soil: The highest block on the farm, at 210m, is planted with 16-year-old premium Pinotage, yielding a modest yield of 3-4 tonnes per hectare. The vineyards are planted deep in Toucurus soil, which is rich in moisture and nutrients. The ridges are planted from the northwest to the southeast, giving the vines twice a day of sunshine.
●Manufacturing: The grapes remain on the tree until the sugar content reaches 23-24.5 degrees, at which point the stems are pinched to cut off the water supply. The bunches remain on the vine for a further three weeks, reaching a sugar content of 30-31°C and losing a third of their weight due to water loss. Harvesting takes place in the cool of the morning. A second round of whole bunch sorting ensures the highest quality with minimal handling of the grapes. After gentle crushing, the juice is fermented at low temperatures and the skins are soaked three times daily. The wine is aged for 3 years in 300 liter barriques of 80% French, 20% American and 30% new barrels. Spontaneous malolactic fermentation takes place, adding complexity to the wine.
