  • Harvest Reporting: Growers must report exact yields to the state to prevent "watering down" or unapproved mixing.

  • Strict Chemical Analysis: Before any wine can be exported, a government-designated laboratory tests for:

    • Volatile acidity and SO₂ levels

    • If it doesn’t meet the strict standard, it cannot be sold.

  • The Sensory Audit: A panel of experts tastes the wine to check for defects, oxidation, or impurities. Only after passing this human audit does it receive the W.O. Seal.
